HMMM.. YES PLEASE, WITH A DOLLOP OF SKIN SUPPORTING NUTRIENTS

It's that time of year when we start to wind down summer and mentally prepare to get the kiddo ready for heading back to school next week. TBH I keep it pretty low key. We’ve never been back to school shopping. I always make sure I’ve got new stuff through out the year that he can wear on the first days transitioning out of summer into fall that are “new”for him at that time. This way we can enjoy our summer to the fullest to the very end with out that stressful list of must haves.
These double chocolate waffles inspired by Meghan Telpners' "Chocolate Chocolate Say it Twice Pancakes" in her #undietcookbook are #glutenfree and #dairyfree, and can be made #eggfree making them #vegan if needed. Enjoyed here with almond butter syrup- DREAMY like salted caramel if we are talking truth about the flavour. We added coconut whip cream, bananas and extra chocolate. Decadent yes, and also full of health supportive ingredients. This is just one summer special request that we’ve made time for this year.

DOUBLE CHOCOLATE WAFFLES By Jen McLaughlin
makes 5-6 round Belgium style waffles
Dry Ingredients:
3/4 cup Buckwheat flour
1/2 cup Tapioca Starch or Arrowroot Starch
1/2 cup Brown Rice Flour
2 Tbsp Chickpea Flour
1/2 cup Raw Cacao
1/4 cup Collagen Powder, grassfed, organic
2 Tbsp Baking Powder
2 Tbsp dry sugar such as, Date Sugar, Coconut Sugar or Organic Cane Sugar-white or brown
3/4 tsp sea salt
1/4 cup dairy free mini chocolate chips(opt)
**can use any kind of lightly toasted chopped nut, flaked coconut, seeds or oats to replace chocolate chips if desired or simply omit them.
Wet Ingredients:
2 eggs or 2 chia or 2 flax egg replacements (see below)
1 tsp apple cider vinegar
1/2 cup Milk of choice or water
1 large really ripe Banana (with black spots), mashed
2 Tbsp liquid sugar such as, Coconut Nectar, Maple Syrup or Honey
1/4 cup coconut oil,melted
1 Tbsp nut or seed butter of choice, melted with the coconut oil- I used almond butter (see below)
** additional coconut oil for oiling the pan if neccesary
Follow This Simple Method:
Preheat waffle iron.
Preheat oven to 175F
Combine all dry ingredients EXCEPT chocolate chips, sifting into a medium sized bowl and stirring together.
Make flax or chia egg if using in a small bowl. Let stand to gel.
Combine all other wet ingredients in a large bowl or in bowl of stand mixer. Add eggs or egg replacement incorporating all liquid ingredients well.
Add dry ingredients into the wet ingredients in two additions scraping down sides if needed between additions.
Stir in the chocolate pieces.
Oil waffle iron if needed.
Scoop with a measuring cup approx. 2/3 cup batter into a prepared (Belgiun) waffle iron. Cook according to the manufacturers directions, usually 2-3 minutes. place on rack in oven to keep warm, until serving time.
Top these waffles with your fave toppings.
here are some ideas-
1/2 cup almond butter, 2 tbsp coconut oil and 1/2 maple syrup with a pinch or two of sea salt gives a salted caramel flavour.
chia berry jam
coconut whipped cream with an assortment of fruit and/or nuts
eaten like toast spread with nut butter topped with fruit thats in season ( an easy on the go breakfast or snack solution)
fruit syrup
Chia Egg recipe
11/2 Tbsp ground chia
1/4 cup water
Stir to combine and let gel before adding to recipe
Flax Egg recipe
11/2 Tbsp ground flax
1/4 cup water
Stir to combine and let gel before adding to recipe
Almond Butter recipe
1 1/2 cups raw almonds
1 Tbsp coconut oil
1/8-1/4 tsp salt (according to taste)
Roast almonds in oven at 200F for about 3 hours or until at desired roast checking and stirring every hour.
Pour into a high powered blender with oil and salt blend until desired consistency. Scrape into a jar and store in fridge.
